  • Roasted Rack of Lamb

    The Blue Lion Restaurant has been a Jackson favorite since 1978. Ask locals about their favorite meal in town, and they’ll often mention The Blue Lion’s roasted rack of lamb. This dish keeps patrons coming back: a full New Zealand rack rubbed with Dijon mustard and coated with seasoned bread crumbs, baked and served sliced with a peppercorn-rosemary cream sauce and jalapeno mint sauce—declared by many to be “the best lamb I’ve ever had.”
